Happy Easter

What a glorious day to celebrate Easter! We rose early so that we could spend the morning surrounded by God’s magnificent creation. The view from atop the mountain is always such a sweet reminder that we serve a powerful yet loving God.


Easter Church Service on Aspen Mountain

This morning we took the gondola to the summit of Aspen Mountain for “crunchy” church. Today was the 40th annual sunrise service hosted by Aspen Chapel on the mountain. It was definitely not the traditional service that we’re accustomed to attending on Easter morning. For one thing, we wore our ski gear! The view was truly awe-inspriring, though, and I felt so thankful to be worshipping the promise of new life in such a spectacular setting.


Easter Skiing on Ajax

After the church service concluded, we skied over to Bonnie’s for breakfast on the deck. Then, we decided that since it was such a gorgeous bluebird day, we’d stay and ski Ajax for a few hours. It was so warm and sunny that we didn’t even need jackets. Cheers to spring skiing! I think we may have a new Easter tradition….


Easter "Egg" Hunt

The dogs didn’t miss out on today’s festivities. The Easter Bunny laid fresh golden tennis balls for Denver and Ollie, so we went to the park to play fetch this afternoon. It’s crazy to think that a week ago the park was still mostly covered with snow. We hope the sunshine and blue skies are here to stay!

Pick One: Colorado Edition

As my husband can attest, if there is a homes tour or an open house anywhere within a 25 mile radius, then I’ll be first in line to get a sneak peak! He says I’m nosy, but I call it research. After all, I was an architecture major in college so snooping around other people’s homes is technically “continuing education”. Right?

Okay, maybe I am a little bit nosy. I just find it so fascinating to see how other people live. My idea of a perfect Saturday involves browsing local real estate listings while sipping my morning coffee, then hitting up as many open houses as possible before settling in on the couch to watch an HGTV marathon. Ironically, that same scenario is Jason’s definition of a weekend from hell. Husbands are funny like that.

The Great Outdoors

I feel like the weekends are never long enough to fit in all the outdoorsy adventures that we plan. Even during the coldest months, there are just so many fun things to do in the mountains. Of course, we’re taking full advantage of our season ski passes! We’ve been skiing almost every single weekend since we moved to Colorado at the end of December. In addition to downhill skiing, we’ve squeezed in quite a bit of cross-country skiing and several beautiful hikes. Here are some photos from a few of our recent excursions:


Aspen – Nature Tour on the Rio Grande Trail

In February, we went on a twilight cross-country ski tour with the Roaring Fork Conservancy. Our guides shared interesting factoids about the riparian ecosystem along the Rio Grande trail. We also learned some local history, watched Dippers bobbing along the river and even saw a frozen waterfall. It was nice to get a little exercise and eduction all at the same time. Not a bad way to spend a random Tuesday evening!


Aspen – Cross-Country Skiing at North Star Preserve

Another memorable cross-country skiing excursion was at North Star Nature Preserve. The preserve is a really pristine, peaceful open space with gorgeous views of Independence Pass. Apparently it’s also supposed to be a great place to see wildlife, although I was too busy admiring the mountains to notice any critters.


Carbondale – Hiking at Mushroom Rock

One Sunday afternoon we took the dogs to Red Hill’s Mushroom Rock trail to burn off some energy. This is a popular hike for it’s incredible views of Mt. Sopris, the Roaring Fork Valley and the town of Carbondale. It was pretty muddy on the day that we went due to snow melt, but the dogs seemed to enjoy it nonetheless. They weren’t quite as thrilled about the bath that followed once we got home, though.


Aspen – Hiking at Maroon CreekOne of the most scenic hikes we’ve been on recently was along Maroon Creek under the Tiehack pedestrian bridge. (As a Fightin’ Texas Aggie, I’m obviously partial to anything with “maroon” in it’s name.) We were there on St. Patrick’s Day and had the entire trail to ourselves. It still seems so surreal that we actually live in such a beautiful place where we can go on amazing hikes like this on a whim.

So, those are a few of the fun things we’ve been up to. There is always something to see and do in the mountains, that’s for sure!

Working Girl

The Amazing Adventures of Working Girl by Karen BurnsI saw this book out of the corner of my eye while browsing at the library and it kinda piqued my interest. After flipping through a few pages, it looked too entertaining to pass up so I checked it out and ended up reading the entire book in one afternoon. The author, who has had 59 jobs over the course of her career, shares her real-life experiences and advice from the point of view of Working Girl – a sassier, bossier version of herself. Gosh, some of these stories are so hilariously funny and totally relatable! According to the author, this book was written for every woman who has ever wanted, needed, lost, quit, hated, or loved a job. I wish I could buy a copy for every working girl out there!

Cinco Things for Spring

Gah! The weather the past two days has been absolutely gorgeous here. It’s hard to imagine that just last Monday it was bitterly cold, windy and snaining (snow + rain) sideways. In fact, it was so pleasant today that I took my laptop to the local coffee shop and worked outside on the patio for a couple of hours just to soak up the sunshine. The days seem to be getting longer, too, which means that spring is just around the corner. Here are five of my favorite things guaranteed to make this spring even brighter:

These are so refreshing! The Aranciata and Limonata flavors are my go-to spring and summer beverage. They also come in a can, but I feel fancier drinking from a glass bottle. I like to close my eyes, sip slowly and daydream that I’m at a trattoria somewhere in Italy. Although, if that were the case, I’d be drinking wine. Lots of wine.

If you have a pulse, then you know that denim and chambray shirts are all the rage right now. I’ve had my eye on this one forever, but just couldn’t justify it’s $98 price tag (clearly J. and his Crew are really proud of their goods). When I saw that American Eagle had a similar version on sale for $30, I immediately added it to my online shopping cart and then proceeded to stalk the FedEx guy daily until it finally arrived on my doorstep. Best purchase ever! I could do an entire post just on outfits I’ve put together with my beloved denim shirt. It’s the perfect transition piece for your spring wardrobe. Spring Blooms

Despite the snow still on the ground outside, it’s springtime on my desk! I picked up these happy yellow Spider Mums for $4 at Whole Foods this week. Actually, I handed them to the hubs and subtly said “Here, I think you should buy these for me”. He did because he’s sweet like that. Until there are flowers outside, I plan to treat myself to some inexpensive blooms. And you should do the same. You’re worth it!

I’m in the market for a new bike and I think this one is adorable. These are my criteria – it must be: 1) retro-looking, 2) aqua or green, 3) accessorized with a wicker basket. Is that too much to ask? I have grandiose visions of peddling downtown to the Farmers Market to buy fresh flowers and produce. Or to the park with my picnic lunch. We all know that trying to tote my dogs around in that bucket would be a recipe for disaster, but a girl can dream.

Menu Planning Perfection

There are tons of free printable menu planners on the interwebs, but I’ve just never been able to find “the perfect one”. I searched high and low for a planner where I could write my menu plan on one side and make a categorized grocery shopping list on the other. It helps me to see them side by side. I can’t tell you how many times I’ve gone to the grocery store with my list, only to forget which meals I’m there shopping for. (If Alzheimer’s can set in during your 30’s, then I’m pretty sure I have it!)

So, I designed my own menu planner and now I’m sharing it with you! Another nice thing about this one is that I created editable text fields, so you can type your menu plan and shopping list directly on the PDF. If there are staple items you buy often, then you can add those to the shopping list and save the template to your computer. That way you’ll never forget the red wine, dark chocolate, and mint Milano cookies (or maybe those are just my staples?).

What’s Cookin’ – Menu Plan for Feb. 24 – Mar. 2

I realize that it’s already beginning to feel like spring in many parts of the country, but winter is still in full force here and we got about 7 more inches of new snow in the mountains overnight. I’m definitely not complaining – warmer weather will be here before we know it so right now I’m savoring every snowflake while its lasts. I wanted to post our menu for the week before we head up the slopes to enjoy today’s fresh powder. These hearty meals should take off the winter chill and warm the soul.

Happy (Belated) 2013

So, yeah, we’re almost 2 months into 2013 and I’m just now getting around to posting our New Years card. Don’t judge.

We didn’t send out Christmas cards this year since we were in the middle of moving from Oklahoma to Colorado. (Honestly, we were total grinches in December…..no holiday card, no Christmas tree, zero decorations whatsoever. I’m surprised that I even remembered to buy presents for anyone on our list.) I count holiday cards among life’s simple pleasures, though, so as soon as we got settled I went to work designing a New Year card. I opted for a wintry feel to reflect our new surroundings – after all, what says “Colorado” like snowy mountains! Luckily, my little family humored me long enough to get a couple of decent shots for our card.

I thought I was being really efficient by putting our new mailing address and contact info on the back so that everyone could keep in touch. As luck would have it, right after I mailed 100 of these puppies to our closest friends and family, the local Post Office realized that they had mistakenly assigned 2 families to the same PO Box and our mail was getting all mixed up. To fix this lovely situation, we were reassigned to a different PO Box which means that our address has changed yet again. (So if you need to mail us anything, please email me for our “real” address!) Needless to say, I do not have fond feelings for the United States Postal Service at the moment. In fact, I’ve already decided that I’m sending next year’s cards via carrier pigeon. How cool will that be?

What’s Cookin’ – Menu Plan for Feb. 17-23

My Recipes is one of my favorite places to find new dinner ideas. This website compiles tried and true recipes from magazines like Cooking Light, Southern Living, Food & Wine and Real Simple. Rarely have I made anything from here that we don’t like, especially when I stick to the ones with 4 or 5 star ratings. All of the meals on this week’s menu received outstanding reviews on My Recipes, so they are sure to be winners, right?

Living in a Winter Wonderland

So, finally, some pictures of Colorado! We’ve been so busy exploring that I haven’t yet taken the time to share what we’ve been up to since moving to Colorado in December. Of course, our main purpose for being here is that Jason is completing his last semester of law school (woohoo!) by interning for an Aspen-based law firm that specializes in water law. It’s a dream job for him and he’s really passionate about the work he’s doing. As an added bonus, we’re able to live in a beautiful place surrounded by lots of fun things to do.


Downtown Basalt, CO

Basalt is a charming little mountain town in the middle of the Roaring Fork Valley between Glenwood Springs and Aspen. It’s known for its world-class trout fishing and mountain biking. We’d only visited once very briefly before moving here, so we really didn’t know what to expect, but now that we’ve lived here for almost 7 weeks we realize just how lucky we are to be residents of Basalt. This small, friendly community fits our active lifestyle and already feels like “home”. We live downtown in a tiny (I’m talking 733 sq ft!) condo with an amazing view of the Roaring Fork and Frying Pan rivers. I love being able to walk wherever I need to go – the grocery store, library, post office, yoga studio, park, pub…you name it, we can walk there. Since I now work from home, my car often doesn’t leave the garage for days at a time. It’s fabulous! I feel like Basalt is our own little Stars Hollow and I hesitate even writing about what a hidden gem it is. We hope to have lots of visitors, though!


Skiing in the Roaring Fork Valley

Perhaps the best part is that there are 4 ski resorts within a 20 mile radius – Snowmass, Buttermilk, Ajax and Aspen Highlands. We figured that since you only live once and, you know, the mountain is just right there, then it was worth the splurge to get a season ski pass. Now we wake up on the weekends, check the snow report and then decide where we want to ski that day. We are officially ski bums. It’s ridiculous, really.


Skate Skiing Lessons

We’ve picked up a new hobby, too – skate skiing! To be honest, before moving to Colorado I didn’t even know that there was such a sport. But, when we saw that the Aspen Cross Country Center was offering free beginner lessons one Sunday morning, we decided to check it out.

And I hated. every. second.

Seriously, that first lesson may have been the worst hour and a half of my life. Jason was a prodigy and picked it right up, of course. Somehow he convinced me to take a second lesson and that one went slightly better, but my legs have never been so sore. It’s an incredible core workout, too. Let’s just say, it’s not as easy as it looks!


Hiking in the Roaring Fork Valley

When the weather is nice, we try to get out for a hike with the dogs. Hiking is probably my favorite outdoor activity and we’re having a lot of fun discovering new trails together. For his birthday, I bought Jason a great guide covering local day hikes in the Roaring Fork Valley that we’ve been using to plan our adventures. We look forward to hitting the trails hardcore once spring and summer roll around!


Snow DogsAnd for those of you who have been worried about the dogs, well, worry no more. Turns out, they LOVE the snow! Even Denver, who typically isn’t a fan of the cold, looks forward to frolicking around outside. Both Denver and Oliver are totally in their element in the mountains. As soon as we come back inside, though, they snuggle up in front of the fireplace and stay there for hours. It’s a dog’s life, for sure!

Believe me, we know how lucky we are to live in such a beautiful setting and we hope that we don’t ever take it for granted. Every time I glance at the majestic mountains, look out the window to see the snow quietly falling or wake up to the sound of the stream trickling by, I’m in awe of God’s amazing creation. Our hearts are happy here!
